Parsley essential oil is an expressive spicy-green material with dry herbaceous, woody and slightly earthy nuances. Its profile depends heavily on the plant part and chemotype used, so professional application calls not only for organoleptic assessment but for a confirmed GC profile against a specific specification.

In flavour systems the oil can be used in savoury compositions, broth and soup bases, sauces, marinades and spice blends where a natural parsley or green-spicy shade is required. This is particularly useful in formulations where dried herbs give insufficient intensity or unwanted particles.
