Hyssop essential oil has a rich herbaceous, camphoraceous and spicy profile. It combines cool top notes, dry greenery and warm spicy nuances; the ratio of pinocamphone, isopinocamphone and terpene components shapes the character of each batch.
In perfumery hyssop is useful for aromatic, herbal, spicy and camphoraceous compositions. It adds dryness, expressiveness and complexity to formulas and works well next to lavender, sage, rosemary, citrus and woody notes. Because of its high intensity the oil is more often used as a distinctive modifier than as a neutral background.
In food-grade flavour development hyssop can be applied in herbal and spicy compositions, seasoning systems, sauces and botanical directions. In cosmetics it is interesting for natural soap, body products and fragrance products that call for an unconventional herbal note.
